Black Bean and Hominy Salsa
Ingredients
| 2 | cups | black beans, cooked, rinsed and drained | |

| 1 | can | (15 oz.) golden hominy, rinsed and drained | |
|
|
|||
| 1 | avocado, diced | ||
|
|
|||
| 1 | cup | yellow bell pepper, diced | |
|
|
|||
| 1/2 | cup | red onion, chopped | |
|
|
|||
| 1/4 | cup | fresh cilantro, chopped | |
|
|
|||
| 1 1/2 | tablespoons | jalapeno, minced and seeded | |
|
|
|||
| 1/2 | cup | salsa, prepared (refrigerated-style) | |
|
|
|||
| salt and pepper to taste | |||
|
|
|||
Directions:
In a large bowl, combine black beans, golden hominy, avocado, yellow bell pepper, red onion, fresh cilantro and jalapeno. Add salsa; gently toss. Taste and add salt and pepper as needed.
